History: Mayan salt par excellence, the exploitation of salt ponds by the Mayas dates back to 300 BC. C., when the Spaniards arrived in the 16th century, they were very impressed by the Yucatan salt flats, as Bishop Fray Diego de Landa pointed out in his Relation of the things of Yucatan. Origin: We select the best saline ponds, fed by rainwater. When it evaporates, it gives rise to fine crystals of salt that float on the surface, known as fleur de sel. Taste: Light, delicate, non-abrasive because it is a salt from rainwater, not sea or mineral, which makes it unique. Location: Ría de Celestún Biosphere Reserve, a protected natural area with ecosystems, not significantly altered, where representative species of national biodiversity inhabit, thus guaranteeing sustainability. Harvest, Collection and Packaging: There are only 2 harvests a year, the first between the months of March and April and the second in the month of November. The extraction of the pink crystals that float on the surface is done manually with the help of shovels. , with which it is delicately carried to the shore of the ponds, on days when the wind does not blow, it is stored in the shade so that it does not lose its pink hue and dry out due to runoff.
